Step 2: Prep the chicken and vegetables
- Rub the whole chicken inside and out with Meat Candy seasoning (we eyeball it… you should too 👀) and drizzle lightly with olive oil.Stuff the cavity with onion wedges, rosemary, and thyme for aromatic, herb-roasted chicken flavour. Insert a probe thermometer into the thickest part of the breast (avoiding bone) to monitor temperature while cooking.Toss potatoes, onions, and garlic in olive oil and SPG seasoning (sprinkle like you mean it 😎), then scatter them around the chicken in your cast-iron pan. 💡 Optional: Add other veggies you love - carrots, brussels sprouts, or anything else you’ve got on hand. Step 3: Roast to perfection
- Place the pan in your Pyro Kitchen pizza oven and close the damper and door.Roast for approximately 1–1.5 hours, or until the internal temperature reaches 165 °F (74 °C) and the chicken skin is golden and crisp.If the skin browns too quickly, flip the chicken halfway through. Step 4: Rest and serve
