Ingredients
  

  • 1 whole 4-5 pound chicken
  • 4-5 medium potatoes cut into 1-inch cubes
  • 1 large onion cut into wedges
  • 2-3 tbsp olive oil
  • Meat Candy Seasoning - or your favourite chicken seasoning *we don't measure - dump like no ones watching 😆
  • SPG Seasoning or a seasoning for the vegetables *we eye ball it for measuring....you should too👀

Method
 

Step 1: Fire up your Pyro Kitchen pizza oven
  1. Start a wood fire with the chimney and door fully open. Add 4–5 pieces of wood to get it going, then a few more once it’s burning strong to build a solid bed of glowing coals.
    Once the flames mostly die down, your oven should stabilize around 300 °F (150 °C) -perfect for slow roasting a whole chicken with wood-fired flavour, keeping the meat juicy and skin crispy.
    🔥 Hot Tip: More coals and less flames is your hot spot. Think of flames like a broiler - great for finishing colour but too much can burn or dry out your chicken. Coals provide slow, even heat for perfect results.
Step 2: Prep the chicken and vegetables
  1. Rub the whole chicken inside and out with Meat Candy seasoning (we eyeball it… you should too 👀) and drizzle lightly with olive oil.
    Stuff the cavity with onion wedges, rosemary, and thyme for aromatic, herb-roasted chicken flavour. Insert a probe thermometer into the thickest part of the breast (avoiding bone) to monitor temperature while cooking.
    Toss potatoes, onions, and garlic in olive oil and SPG seasoning (sprinkle like you mean it 😎), then scatter them around the chicken in your cast-iron pan.
    💡 Optional: Add other veggies you love - carrots, brussels sprouts, or anything else you’ve got on hand. Go nuts! The more veggies, the more flavour-packed, colourful one-pan dinner.
    Add fresh basil and thyme for extra herbaceous aroma.

Step 3: Roast to perfection
  1. Place the pan in your Pyro Kitchen pizza oven and close the damper and door.
    Roast for approximately 1–1.5 hours, or until the internal temperature reaches 165 °F (74 °C) and the chicken skin is golden and crisp.
    If the skin browns too quickly, flip the chicken halfway through. If needed, loosely tent with foil to protect the skin while the chicken finishes roasting.
