The Best Pizza Oven Chicken Wings (Wood-Fired & Crispy)

Once you try wings in your pizza oven, your BBQ will be crying in the corner, missing you.. The wood-fired flavour, the crispy skin, the juicy middle, it’s everything wings are meant to be.
Here’s how to make them, step by step.

Ingredients
  

  • 2 lbs Chicken wings
  • 1-2 tbsp Olive oil
  • 4 tbsp Meat Candy Seasoning (or your favourite rub)
  • 1/2 cup Your favourite wing sauce *Optional

Equipment

  • Caldo or Vera Pizza Oven
  • Cast Iron Pan, or Tuscan Grill

Method
 

Step 1: Fire it up
  1. Start a wood fire in your oven with 4 or 5 pieces of wood. Keep the door and chimney fully open so the fire has plenty of oxygen to get going.
    Once it’s burning strong, add a few more pieces to build up a solid bed of coals.
    🔥 Hot Tip: Use wood for longer cooks, it gives that rich, wood-fired smoky flavour that will make your wings unforgettable.
Step 2: Prep your wings
  1. While your oven is heating up, grab your cast-iron skillet, oven-safe dish, baking sheet, or our new Tuscan grill.
    Toss your wings in a drizzle of oil (we like olive oil). If you're a garlic fan, mince garlic with your oil. Then coat the wings in your favourite seasoning. No favourite yet? Try our Meat Candy seasoning, it’s dangerously good.
    Lay the wings out so they’re just barely touching each other. That’s the secret to crispy, golden edges instead of soggy, stuck-together wings.
Step 3: Check your fire
  1. Once the flames have mostly burned down and you’re left with hot glowing coals, your oven should be around 300 °F (150 °C) - the sweet spot for wings.
    If there are still lots of big flames, give it a few more minutes. Think of flames as the broil setting — great at the end for char, but not the best for the whole cook (unless you like your wings extra, extra well done).
Step 4: Cook time
  1. Place the wings in your oven, then close the damper and close the door to hold the heat steady.
    They’ll take about 30 minutes to cook through. If it’s your first time, peek in once or twice, think of it as a trust-building exercise between you and your oven.
Step 5: Ready to serve
  1. When they’re golden, sizzling, and crispy, pull them out. They are delicious served dry, if you love that smoky, wood-fired flavour. Or toss them in your favourite sauce.
    Serve hot, and try not to eat them all before they hit the table.
